Sports Cynts Show for March 26, 2010

Friday’s show was great! We talked about NCAA March Madness bracket busters, some of the new NFL rules – including the new playoff overtime rule (and my opinion of it. I also talked about my quest to go to the Pro Football Hall of Fame Enshrinement Festival August 6 - 9. We also prepared Mini Pecan Tarts. One of my listeners, Da Joker, was in the chat room and had a lot to say on the topics! Mini Pecan Tarts

Ingredients
• Pastry for 9 inch double crust pie
• 2 beaten eggs
• 1 cup sugar
• 3 tablespoons melted butter
• 5 tablespoons corn syrup
• 1 teaspoon vanilla extract
• 1 cup chopped pecans
• Mixing bowl
• Electric Mixer
• 12 Cup Muffin pan
• Pam cooking spray

Directions

1. Preheat oven to 400 degrees. Lightly grease 8 cups in the muffin pan with the Pam cooking spray.
2. Spread the pecans in a baking pan and place in the oven for 2 – 3 minutes or until lightly toasted.
3. While waiting for the pecans to finish, begin rolling out the pastry.
4. Once the pecans are finished, remove them from the oven and immediately turn the oven down to 325 degrees.
5. Cut 8 pastry circles (about 4 ½ - 5 inches). Fit pastry circles into greased muffin cups.
6. In a large bowl, combine eggs, sugar, butter, corn syrup, and vanilla extract. Mix completely, then stir in the toasted pecans. Pour an equal amount of mixture into each pastry-lined muffin cup.
7. Bake in the oven for 35 to 40 minutes until pastry is golden brown and filling is set.
