Sports Cynts Show Recipe Ingredients for June 18, 2010

We’re going to get to the heart of what's going on in sports and prepare a heart healthy appetizer that was originally prepared on April 16. Why am I repeating a recipe you ask?  After going back to listen to the April 16th show, I realized that my phone was on mute until about the last few minutes of the show, so there was no audio.  We’ll talk about the NBA Finals (and congratulate the champion), NFL Football, College Football and of course, mention World Cup Soccer and golf briefly!  This week’s recipe is Pesto Chicken and Squash Bites.

Pesto Chicken and Squash Bites

1 pound, skinless boneless chicken breast halves
2 small size zucchini halved lengthwise
2 small yellow summer squash halved lengthwise
¼ cup purchased basil pesto
¼ teaspoon salt
¼ teaspoon pepper
Broiler Pan
Aluminum Foil or Broiler pan foil sheets
Toothpicks or short bamboo skewers
