Sports Cynts Show for February 26, 2010

Today’s show was delicious! We talked about the Ladanian Tomlinson and Brian Westbrook being released and where they may possibly end up…if anywhere. Baseball was mentioned! The NFL Combine was also talked about. Which quarterbacks are participating? What is the purpose of the Combine? Is it better to have a Pro Day at the school or participate in the Combine?

The 2 recipes for this week were Cyntsational Sliders and Peach Turnovers!

Cyntsational Sliders
1/2 teaspoon basil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon Montreal Steak seasoning
          or
The Seasonings of your choice
1 pound ground beef/chuck/sirloin
(3-inch) buns or rolls (about 8), split in half
Your favorite Burger trimmings
Mixing bowl
Baking sheet
Rolling pin
Plastic wrap

Preheat either your George Foreman Grill (or equivalent) or your griddle/pan to 350 degrees.

Combine the spices and meat in a medium bowl until thoroughly mixed.

Line a baking sheet pan with parchment paper and place the ground meat in the middle of the pan. Cover the meat with a large sheet of plastic wrap and roll meat with a rolling pin until it covers the surface of the pan or until it is about ¼ inch high. Remove the plastic wrap. Use a sharp knife to cut the meat into even squares.

(optional) Preheat your oven to 250 degrees. Wrap the buns in foil and place in the oven for 6 to 7 minutes until warm.

Meanwhile, do one of these options:
• Place the burgers on the grill and cook for 4 to 5 minutes
• Place the burgers on the griddle/pan and cook for 2 to 3 minutes on each side.

Remove the buns from the oven and cut each one in half. Assemble the sliders on the buns with meat and the condiments/accessories of your choice.

Peach Turnovers
Either 1 - 29 oz can or 2 - 15 oz cans of sliced peaches (cut into smaller pieces)
1/3 Cup brown sugar (You may substitute granulated sugar or split them ½ and ½)
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
2 sheets of frozen puff pastry , thawed
Cinnamon sugar/mixed
Mixing bowl
Parchment paper
Baking Sheet

Preheat the oven to 400 degrees.

Combine the peaches, brown sugar, cinnamon and nutmeg together in a mixing bowl.

Lay the puff pastry sheets on the parchment covered baking sheet (You may have to do one sheet at a time). Cut the pastry sheets into quarters (sprinkle with cinnamon, if desired).

Spoon some of the peach mixture lengthwise on one half of each rectangle, leaving ½” edge to seal. Fold over the other half and press to seal. Using a sharp knife cut small slits into the top of each turnover for steam vents.

Sprinkle cinnamon-sugar on top of the turnovers and place into oven. Bake 15-17 minutes until golden brown.

Remove from oven and serve when cool.
