Sports Cynts Show for March 5, 2010

We had a great show today. We talked a little about the NFL Combine and Myron Rolle. Every team should be looking to draft him first! We talked about NBA Basketball, college basketball and the NCAA tournament. Another subject was Major League Baseball and some of my disagreement with some of their unwritten rules.

We also prepared 2 delicious recipes.

Stuffed Bell Peppers
4 Medium Green Bell Peppers
1 pound ground beef
¼ Cup Onion chopped
¼ Cup Bell Pepper chopped
1 - 8 ounce can of tomato sauce
1/2 teaspoon basil
1 teaspoon Montreal Steak seasoning
1 teaspoon Mrs. Dash seasoning
or
Your favorite seasoning
1¼ Cup cooked rice
1/3 Cup shredded cheddar cheese
Mixing bowl
Square baking dish/cake pan
Foil paper

Preheat the oven to 350 degrees.

In a skillet, brown the ground beef while mixing in the onion, bell pepper and seasonings until the beef is no longer pink and the vegetables are tender. While the meet is cooking, cut the tops off of the bell peppers, scoop out the seeds and pulp and discard. Stand the bell peppers in a microwavable dish and microwave on high for 5-6 minutes until the peppers are heated through. Stir in the tomato sauce and rice into the ground beef mixture until thoroughly mixed. Spoon the ground beef and rice mixture into the bell peppers. Microwave an additional 2 – 3 minutes. Top with shredded cheese and microwave for about 1 minute to melt the cheese. Serve hot.


Stuffed Apples
4 medium apples (the type of your choice)
¼ Cup brown sugar
¼ Cup sugar
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
½ Cup chopped walnuts
Mixing bowl
Parchment paper
Square baking/cake pan

Preheat the oven to 350 degrees.

Remove the core from the apples and discard. Remove some of the pulp from the apples and place into a bowl. Add the sugars and spices to the apples and toss until the apple is completely coated. Stir in the walnuts. Place the apples in the baking dish. Spoon the mixture into the apples and sprinkle cinnamon and sugar on top of the apples.

Place in the oven and bake for 40-45 minutes until the apples are tender. Remove from the oven and serve warm.
