Happy New Year!
Today we had a great show! I talked about the BCS Championship – Congratulations to Alabama in there defeat of the Texas Longhorns 37-21. Nick Saban is the 2nd coach to win 2 BCS Championships and the only coach to do it with 2 different schools. Mark Ingram is the 2nd player to win the Heisman Trophy and the BCS Championship in the same year. He is also the 2nd running back to win the Heisman Trophy and any national championship in the same year.
This weekend’s NFL Wild Card Games were discussed - Philadelphia Eagles vs Dallas Cowboys and Cincinnatti Bengals vs. New York Jets on Saturday. On Sunday, Green Bay Packers vs. Arizona Cardinals and Baltimore Ravens vs. New England Patriots.
Another topic was my feelings on athletes with weapons centering mainly on what’s going on with Gilbert Arenas of the Washington Wizards.
Two delicious recipes were prepared on the show: Fruit Salsa w/Cinnamon Chips and Cynt’s Secret Sauce Meatballs.
Here are the recipes for this week:
FRUIT SALSA WITH CINNAMON CHIPS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.
This fruit salsa is good with the cinnamon chips, but also as a topping for ice cream or pound cake, to mix with yogurt or even as a stand alone snack!
CYNT'S SECRET SAUCE MEATBALLS
1 bag (16 oz) Armour original meatballs (you can use more meatballs with same amount of sauce ingredients if you don’t want them swimming in sauce!)
1 bottle (16 oz) Kraft Honey Hickory BBQ Sauce
1 cup Kraft Catalina Dressing
¼ cup Kraft Zesty Italian Dressing
1/8 cup Pompeiian Burgundy Cooking Wine (Shhh Secret Ingredient)
Crock pot
Combine everything in the crock pot. Stir until well combined. Turn crock pot on high to heat the meatballs through. Cook until sauce bubbles and stir occasionally. Once the sauce is bubbling and hot, put the crock pot on the warm setting (if available) and leave on while meatballs are being served or during your entire event. When you serve the meatballs to your guests, make sure you substitute your name in place of mine!
